I stumbled upon this recipe for fruit salsa with baked cinnamon chips and WOWIE it looks amazepants! Perfect for a summer treat don't you think? I always notice that I tend to eat light foods when it gets hot out. What are some of your favorite summer eats?
Recipe:
2 kiwis, peeled and diced2 Golden Delicious apples - peeled, cored and diced
8 ounces raspberries
1 (16 oz) carton of strawberries, diced
2 tablespoons white sugar (more or less to taste)
1 tablespoon brown sugar (more or less to taste)
3 tablespoons fruit preserves, any flavor (I used strawberry)
10 (10 inch) flour tortillas
melted butter or butter flavored cooking spray
2 cups cinnamon sugar
1. In a large bowl, thoroughly mix kiwis, apples, raspberries, strawberries, white sugar, brown sugar and fruit preserves. Cover and chill in the refrigerator at least 15 minutes.
2.Preheat oven to 350 degrees.
3.Coat one side of each flour tortilla with melted butter or butter flavored cooking spray. Sprinkle tortillas with desired amount of cinnamon sugar. Cut into wedges and arrange in a single layer on a large baking sheet. Spray again with cooking spray (not necessary if using melted butter).
4.Bake in the preheated oven 8 to 10 minutes. Repeat with any remaining tortilla wedges. Allow to cool approximately 15 minutes. Serve with chilled fruit mixture. Best when made and eaten the same day otherwise the fruit gives off so too much juice and it gets runny.

Resin Rings
I'm a sucker for statement rings, so naturally I was smitten with these resin rings by Hotcakes Design the moment I saw them. The coolest part is that there are a ton of different vintage looking designs to choose from. I'd have to own several of these as I couldn't just choose one (although that peacock one...). Are you a fan of statement rings dears?

Summer Lovin: Flip Flops
I've made a promise to myself that I will not live all summer in flip flops. I even bought myself some really cute, kinda expensive platform wedges to make sure this didn't happen. However, if I was going to live in a pair of flip flops, it would be these Sanuk Yoga Mat Sandals. They are a friend to your feet when no one else will be. You really should have at least have one pair. (I just nabbed myself those turquoise cuties) And yes they are made from real yoga mat! HEAVEN!

Happy Anniversary
13 years ago I married my very best friend in the whole world. Today he is still my best friend and there is no one else in the world I'd rather be with. Thanks for all the memories and good times my love. I can't wait to see what's to come. Happy Anniversary babe. I love you more than 10 million M&M's!!

Has it really been almost a month since my last blog post?! So much has been going on and I think I just needed that little break, but after an awesome trip to Hawaii, I feel much more happy and relaxed. Our trip was filled with jogs on the beach, lots of pina coladas and lying around the pool, and some fun nights out. It's just so beautiful there that how could you not feel relaxed?? However, I'm now in the summer spirit and ready to start posting about summer fun. How have you darlings been?
