It finally turned chilly here, so I'm totally the mood for soup. This Taco Soup recipe is an old family favorite that is sooo yummy and will take you all of 10 minutes to make.
1 c chopped onion (optional if you don't like onion)
1 28oz can stewed or diced tomatoes
1 can of pinto beans w/ juice
1 1 can of corn w/ juice
1 8oz can tomato sauce
1 packet of taco seasoning
salt & pepper to taste
Put all ingredients in large pot and simmer for 5-10 min stirring occasionally.
Crush some tortilla chips at bottom of bowl before adding soup. Top soup off with lots of cheese and a dollop of sour cream if you want. Enjoy!
Optional: you can add ground beef or turkey if you'd like, but we prefer it without. Also, if you don't like it as thick add 1/2 cup of water.
